Welcome to our annual collection of community holiday recipes. Each year, the 91原创 Advance Times casts a wide net asking for local people to share Christmas recipes that hold some significance to their family or themselves. This year, there's everything from cookies, pancakes, and fruit pizza to scalloped potatoes and cornbread.

This is by far my most cherished Christmas recipe.
Ginger snaps are the most delicious cookies, but more importantly for me they will forever remind me of my mom and how magical she would always make Christmas for our family.
Mom would work so hard to make sure we had the most wonderful Christmas 鈥 we would make Christmas crafts, have fun Christmas shopping trips to Vancouver (including Woodwards in Vancouver to see Santa and the incredible Christmas displays).
We would visit with family and friends and have the most wonderful dinner on Christmas Eve, inviting more people than we had chairs for.
She would make sure we always all had homemade Christmas PJ鈥檚 too!
If no other baking was done at Christmas time, Mom would always make dozens and dozens of ginger snaps for our house, and also to give away.
She was somewhat famous within our circle of family and friends for her ginger snaps. She knew how to cook them just right to when the tops start to crack.
When my mom passed away, our family decided to make hundreds of these cookies (with an attached recipe card) to give out at her celebration of life.
Just a note that others in the community knew my mom as Diane Pona.
She served 12 years as a trustee on the 91原创 Board of Education, so you would say I had somewhat of a role model before running myself for the position.
I adored my mom and looked up to her in so many ways. I miss her so much.
She was pretty incredible.

Ginger snaps
Ingredients:
鈥 1-1鈦2 cups pure lard
鈥 2 cups white sugar
鈥 2 eggs
鈥 1鈦2 cup fancy molasses
鈥 4 cups flour
鈥 2 tsp baking soda
鈥 2 tsp cinnamon
鈥 2 tsp ginger
鈥 2 tsp cloves
Directions:
鈥 Cream lard and sugar
鈥 Add eggs and beat well
鈥 Add molasses, flour, baking soda and spices
鈥 Roll into small balls and roll into sugar
鈥 Do not flatten
鈥 Place on greased cookie sheet
鈥 Bake at 350掳F for about 11 to 13 minutes, until tops of cookies start to crack
