Township 7 wine maker Brad Cooper demonstrates sabrage, a ceremonial technique to open a bottle of champagne with a sabre. The blade is slid along the seam of the bottle, hitting the lip which breaks the glass, separating the neck from the collar. Township 7 has produced 55 cases of Star 7 champagne, and served some to participants in a recent workshop on champagne making.
